Boutinot Fide et Arte ‘Les Cerisiers’, Côtes du Rhône Rosé 2017

To make 'Les Cerisiers' we select from vineyards with the intention of producing the very best Côtes du Rhône Rosé we can. For our eleventh vintage - 2017 - we once again journeyed across the Rhône river, to vineyards on the right bank south of Tavel. We also sourced from vineyards around Valréas. Here we source varieties naturally suited to rosé – Grenache Noir for body, Cinsault for freshness and touch of spice from a drop of Syrah.

As with previous vintages, ‘Les Cerisiers’ 2017 is made in the same way as the best rosés of Provence, using the ‘rosé de presse’ method of gentle pressing as soon as the grapes are picked, and then vinified at cool temperatures to preserve the delicate aromas and flavours. 

The delicate shade of pink is wispy and ephemeral like crêpe de chine; the nose is fresh and tantalising with notes of redcurrants and wild strawberries. On the palate Les Cerisiers 2017 is soft, fruity and dreamily luscious with just the hint of a spicy Mediterranean tang adding another layer of complexity to the vibrant red fruit flavours

Winemaking
Made using the rosé de presse method, with very gentle extraction for 1 hour to obtain as much aromatics and flavour as possible, with the least amount of tannins.
Maturation
No oak ageing.
