Boutinot Fide et Arte ‘La Côte Sauvage’ Cairanne, Côtes du Rhône Villages 2015

In the hills above the village of Cairanne in the southern Rhône valley are sited the parcels of Grenache Noir, Syrah, old Carignan Noir and Mourvèdre, from which we made our 2015 ‘La Côte Sauvage’.

'La Côte Sauvage' 2015 is again characterised by finesse and a finely-grained texture evoking exquisiteky spun silk, due in part to the famous ‘argilo-calcaire’ of our hilltop vineyards such as La Pauline and Les Six Terrasses, slow winemaking methods and gentle maturation in French oak,  both 228l barriques (fifth fill) and 600l demi-muids. 

A hallmark of our  'La Côte Sauvage' is finesse and finely grained texture combined with bright and vivacious tones of wild red fruits interlaced with subtle nuances of French oak.

Vineyards
Our Cairanne vineyards are strewn with limestone pebbles over clay, the classic vineyard terroir of ‘argilo-calcaire’ combining minerality from the limestone with enriching nourishment from the water-retentive clays. All older vines on hillside slopes over looking the church of Cairanne.
Winemaking
Hand-picked over a number of weeks to achieve optimum ripeness. Fermented by naturally present ‘wild yeasts’ over 25-35 days cuvaison.
Maturation
Matured for up to 22 months in mostly traditional, smaller 228 litre barrels and 600 litre demi-muids of fifth filll.
